Delicious vegan chickpea balls (or falafels) that I adore! They are extremely easy to prepare and I highly recommend you try them!

Description

Delicious vegan chickpea balls (or falafels) that I adore! They are extremely easy to prepare and I highly recommend you try them!


1 Finely chop the onion, grate the carrot and crush the garlic. Stew onions and carrots in olive oil for about 5-6 minutes. Add the garlic and fry for about a minute.


2 If you use canned chickpeas, drain and wash. In a food processor/blender, add the chickpeas, onion along with the stewed vegetables, finely chopped parsley, lemon juice, tomato paste, chickpea flour, baking powder and season with black pepper, salt and cumin. If possible, run the food processor at low speed to mix all the ingredients well, then increase the speed. Grind briefly, making sure the mixture does not become a puree. But even if it happens, you will still get delicious meatballs.


3 In a baking tray lined with baking paper, form small balls about the size of a walnut. Bake in a preheated 220-degree oven until the chickpea meatballs acquire a pleasant golden crust.
