Chocolate muffins made by old fashioned rolled oats, banana and yogurt, no flour and no added sugar. Their sweetness comes from the bananas and the chocolate drops in them. You can skip the chocolate and then I recommend you add 2-3 tablespoons of honey or maple syrup.

Description

Chocolate muffins made by old fashioned rolled oats, banana and yogurt, no flour and no added sugar. Their sweetness comes from the bananas and the chocolate drops in them. You can skip the chocolate and then I recommend you add 2-3 tablespoons of honey or maple syrup. I prepare them in a silicone molds for baking - once they cool they are easily removed from them. Here's how I make them:


1 Put the old fashioned rolled oats in a food processor or blender and grind them into flour for about 30 seconds to 1 minute.


2 Add to the oats the remaining ingredients without the chocolate drops - yogurt, bananas, vanilla, baking powder, cocoa and soda. Blend for about 1-2 minutes until a homogeneous mixture is obtained. Add the chocolate drops to it and mix with a spoon or spatula.


3 From the whole mixture I got 12 muffins. I use silicone molds for baking. Fill 3/4 of the mixture in each mold. Bake in a preheated 200 degree oven for about 20 minutes. I leave them in the silicone mold to cool, then carefully remove the muffins from the molds.
