Description

Fluffy muffins made with yellow cheese or cheddar. They are suitable for breakfast, as well as for lunch or dinner in a combination of hot soup.

1 In a large bowl, beat the eggs with the sugar. Add the yogurt and olive oil and stir.

2 Add the dry ingredients to the liquid ingredients - flour, baking powder and salt. Mix well with a spoon or spatula. A thicker and stickier dough is obtained. Add the grated yellow cheese and mix well.

3 From the whole mixture I get 12 muffins. You can use a silicone mold or paper cups. Fill them almost to the top.

4 Bake in a preheated 190 degree oven for about 20-25 minutes or until the fluffy yellow cheese muffins acquire a nice golden crust. Allow the muffins to cool completely before eating so that you can easily peel the paper cups from them.

Coconut flour honey raisins muffins that you can make easily and quickly. You need coconut flour, honey (preferably liquid, but if it's not - you can melt it in a water bath), non-dairy milk (I use rice, but it will work well with almond or coconut milk), raisins (you can replace them with cranberries, dates or prunes finely chopped, and why not chocolate). And if you are on a gluten-free diet, you can use gluten-free baking powder.
