Fluffy and delicious waffles with einkorn flour

Description


1 Mix in a large bowl of einkorn flour with salt, baking soda, sugar, olive oil, yogurt, water, egg yolks and vanilla. Stir with a wire stirrer.


2 In a separate bowl beat the egg whites until fluffy foam is obtained.


3 Add the egg whites to the remaining mixture and stir gently with a spatula. Do not overdo the stirring so that the waffles can become more fluffy.


4 Heat the waffle iron well. After it is well warmed up to the maximum degree (and if the shape for your waffle is square, as in my case) put about 3-4 tablespoons of the mixture in each form. Bake until golden.
