Description

Delicious casserole made from mashed potatoes with sour cream, cheddar (or yellow cheese), stewed in butter onion and garlic, baked in the oven.


1 Peel, wash and cut the potatoes into large cubes. Put with a saucepan, add 1 teaspoon of salt and cover with water. Cook for about 10 minutes, until the potatoes are fork-tender, but not completely cooked.


2 While the potatoes are cooking, stew the onion. Finely chop it together with the garlic. In a pan or saucepan, add half the butter, onion and garlic. Stew for about 7-8 minutes.


3 Grate the cheddar.


4 Once the potatoes are ready, take 1/4 cup of their broth. Drain the potatoes. Put them in a large bowl. Add the broth and mash them with a potato masher until they become a puree. Add the sour cream, 1/2 cup cheddar, the stewed onion and garlic, salt and black pepper. Mix well.


5 Transfer the mixture to a baking dish and sprinkle with the remaining cheddar. If desired, you can sprinkle with parmesan or another type of your favorite hard cheese.


6 Bake in a preheated 220 degree oven for about 20 minutes.
