Appetizing and aromatic muffins with fresh blueberries.

10 min preparation

15 min baking

200°C

14 pieces

Description

1 In a large bowl beat the egg with the sugar, then add the soft butter and the yogurt. Beat again.

2 Mix the dry ingredients (flour, baking powder, baking soda, cinnamon, vanilla and salt) into a separate bowl.

3 Gradually add the dry ingredients to the liquid ingredients. Stir until a smooth homogeneous mixture is obtained.

4 Add the fresh blueberries to the mixture and stir briefly.

5 Preheat oven to 200 degrees. From the whole mixture I received 14 muffins, so prepare at least as many paper cups. Fill the paper cups almost to the top (you can see the photo below in the gallery). Bake for 15 minutes or until the muffins acquire a pleasant golden crust.

Coconut flour honey raisins muffins that you can make easily and quickly. You need coconut flour, honey (preferably liquid, but if it's not - you can melt it in a water bath), non-dairy milk (I use rice, but it will work well with almond or coconut milk), raisins (you can replace them with cranberries, dates or prunes finely chopped, and why not chocolate). And if you are on a gluten-free diet, you can use gluten-free baking powder.
