Cheese cracker or solenki from the old recipe notebooks

The recipe for these fragrant and delicious cheese cracker or solenki is from my mother's old recipe notebooks. She still prepares them for me when I visit her, and she manages to take me back to my childhood. I am happy to share the recipe with you.

Description

The recipe for these fragrant and delicious cheese cracker or solenki is from my mother's old recipe notebooks. She still prepares them for me when I visit her, and she manages to take me back to my childhood. I admit that I made many tries until I managed to hit the right proportions to get exactly like hers. I finally succeeded and I am happy to share the recipe with you.


1 In a large bowl, pour the flour and add salt to it. Stir.


2 Put the yoghurt in another bowl and add the soda to it. Stir until bubbling. Add the olive oil and stir again.


3 Add the liquid ingredients to the flour and once the dough starts to form, add the crushed cheese and knead well. If you follow the correct proportions, you will not need additional flour to form the pickles.


4 To form the solenki or cheese crackers, take a ball of dough the size of a walnut and make it into a long wick, slightly sharpening its edges. Twist it to get the desired shape, as shown in the photo.


5 Arrange the cheese crackers in a baking tray lined with baking paper. Bake in a preheated 180 degree oven for about 25-30 minutes or until they acquire a pleasant golden crust.
