I share with you my favorite vegan, gluten-free pancakes made from chickpea flour (besan flour), water, olive oil and salt! You can serve them for breakfast or lunch, served with fresh lettuce, avocado, tomato or whatever you want. I highly recommend you to try them!

I share with you my favorite vegan, gluten-free pancakes made from chickpea flour (besan flour), water, olive oil and salt! You can serve them for breakfast or lunch, served with fresh lettuce, avocado, tomato or whatever you want. I highly recommend you to try them!


1 Put all the ingredients in a large bowl and beat with a wire whisk until smooth and homogeneous. You can sift the flour beforehand so that no lumps remain.


2 Preheat pan with non-stick coating on medium heat (at 9 levels on the electric hob I use, I bake them at level 7). For one pancake I use 1/4 teacup of the mixture. Spread it in the shape of a circle. Bake on both sides until golden. From the indicated dose I get 11 pancakes.
