Vegan salad with quinoa, beans and vegetables (peppers, tomatoes, green onion and red onion). I used a mix of white, red and black quinoa to prepare the recipe, but you can use whatever quinoa you want.

Description

Vegan salad with quinoa, beans and vegetables (peppers, tomatoes, green onion and red onion). I used a mix of white, red and black quinoa to prepare the recipe, but you can use whatever quinoa you want.


1 Boil the quinoa according to the instructions and wash it afterwards. Add a few drops of olive oil extra virgin and set aside.


2 Drain the beans well. Chop the peppers, tomatoes, parsley, green onion and red onion.


3 Put all the vegetables, beans and quinoa in a large bowl. Season with olive oil, crushed garlic cloves, black pepper, salt, vinegar (or lemon juice) and chili. Stir well.
