Description
The preparation of these pancakes is easy, and the result is extremely tasty. Pumpkin puree requires more time for preparation. To prepare it, I boil a pumpkin, drain it, then mash it. I divide the puree into doses (1 cup), which I freeze in the freezer, then easily use for recipes like this. I recommend you try this pumpkin pancakes with a topping of honey and walnuts!
1 Put the liquid ingredients in a blender first - eggs, pumpkin puree, milk, honey and vanilla. Then add the dry ingredients - a pinch of salt, baking powder, cinnamon, ginger and old fashioned rolled oats. Blend for about a minute until a homogeneous mixture is obtained.
2 Preheat pan with non-stick coating on medium heat (at 9 levels on the electric hob I use, I bake them at level 5). For a pancake I use 1/4 cup of the mixture. Put a lump of butter (or whatever fat you choose to use) and after it melts, pour 1/4 cup of the pancake mixture into the center of the melted butter. Spread it quickly in a circle, but not too thin. When bubbles start to form on the pancake, turn it over. Repeat with the remaining mixture. From the indicated measures and quantities I get 10 pancakes.
