Quick and tasty idea how to cook quinoa in the oven with beans and vegetables.

Description


1 Boil the quinoa according to the instructions. Add a few drops of olive oil and set aside.


2 Finely chop the onion, peppers and garlic. Stew the chopped vegetables and sweet corn in olive oil over medium heat for about 7-8 minutes.


3 Add parsley, salt, black and red pepper. Stir briefly and add the tomato juice and 1 cup grated mozzarella. After about a minute, when the mozzarella has melted, turn off the heat, add the drained beans and quinoa. Stir well. Try and if necessary add more salt and spices, according to your taste.


4 Transfer the mixture to a casserole. Bake for 20 minutes at 200 degrees, then add the remaining mozzarella and bake for another 10 minutes or until the mozzarella is baked and acquires an appetizing golden crust.
