Delicious vegan recipe for baked mung bean burgers with vegetables. They are great complemented with hummus and fresh salad.

Description

Delicious vegan recipe for baked mung bean burgers with vegetables. They are great complemented with hummus and fresh salad.

1 Peel, wash and cut the potatoes into large cubes. Boil them until ready (they need about 20 minutes). Allow them to cool and mash them until they become a puree.


2 Wash and boil the green mung bean according to the instructions on the package. If necessary, soak it beforehand. Boil until cooked through until the beans begin to crack. Drain and allow to cool.


3 Finely chop the onion and garlic and grate the carrot. Stew them in olive oil for about 7-8 minutes on medium heat.


4 In a bowl, mix all the ingredients - bean mung , mashed potatoes and stewed vegetables in olive oil. Add the spices - salt, turmeric and black pepper. Mix everything well.



5 Shape flat burgers by shaping their edges with your fingers. Arrange them on a baking tray lined with baking paper.



6 Bake in a preheated 200 degree oven until the mung bean burgers acquire a light golden crust.
