Ginger Pear Muffins - a combination of scents that provokes the senses.

Description


1 Mix the dry ingredients in a bowl – flour, baking soda, salt and cinnamon.


2 In another bowl beat the egg with sugar and olive oil. Then add the yogurt. Beat it again.


3 Gradually add the dry ingredients to the liquid ingredients . Stir briefly.


4 Peel and clean the pears. Cut them into small cubes, then add to the remaining ingredients and mix well. If your mixture appears dense, set aside for 5-10 minutes to allow the pears to release their juices.


5 Grate the fresh ginger and add to the mixture. Stir again well.


6 Preheat oven to 180 degrees. From the whole mixture I've got 19 pieces of muffins, so prepare at least so much paper cups. Fill the shapes almost to the top (you can see the photo below in the gallery). Bake for 22-23 minutes or until the muffins acquire a pleasant golden crust.


7 While the muffins are roasting, prepare the topping for them. It is good to have the oil at room temperature to stir it more easily with honey. After you remove the muffins from the oven while still warm, smear them with a cooking brush with the topping.
