Crispy parmesan crackers with cheddar and white spelt flour. You can replace cheddar with yellow cheese and spelt flour with white flour. If desired, you can season them with a spice of your choice such as paprika, savory, oregano, thyme or basil.

Description

Crispy parmesan crackers with cheddar and white spelt flour. You can replace cheddar with yellow cheese and spelt flour with white flour. If desired, you can season them with a spice of your choice such as paprika, savory, oregano, thyme or basil.


1 Finely grate the cheddar and parmesan.


2 In a bowl, mix all the ingredients - flour, cheddar, parmesan, salt, olive oil, water and spice of your choice (you can skip the spice). Mix well with a spoon or spatula, then knead by hand until a smooth ball is obtained. If you have difficulty shaping the dough, add another spoonful of water. Cover the bowl with cling film and refrigerate for about an hour.


3 Take the dough out of the fridge and knead it again. Roll it out thinly on a kitchen counter (about 2-3 mm thick). Cut the crackers into a shape of your choice using a pizza knife, another sharp knife or a cookie cutter.


4 Transfer them to a baking tray lined with baking paper. Punch them with a fork as shown in the photo below.


5 Bake in a preheated oven at 180 degrees for about 12-15 minutes until golden brown. Watch them, because the baking time depends on how thinly you made them. Cool before eating.
