An easy vegan recipe for bulgur with mushrooms and onion. I usually prepare it with yellow onion, but the dish becomes even more fragrant if you use green onions. The amount of mushrooms can vary according to your taste.

Description

An easy vegan recipe for bulgur with mushrooms and onion. I usually prepare it with yellow onion, but the dish becomes even more fragrant if you use green onions. The amount of mushrooms can vary according to your taste. I also cooked it with 250 grams of mushrooms, but with a larger amount, I like it more.


1 Wash bulgur before use. Soak it in hot salted water for about 20 minutes. Try it to see if it is ready to eat. If not - leave it soaked a little more, and if necessary, add a little more water. Or boil the bulgur according to the instructions on the package in slightly salted water.


2 Finely chop the onion. Wash and cut the mushrooms into slices.


3 Add olive oil, onion and mushrooms to the pot. Stew for about 7-8 minutes under a lid, then remove the lid. Stir periodically until the mushrooms acquire a light golden tan.


4 Add the prepared bulgur to the mushrooms (should be no remaining liquid in it, if there is - drain). Mix well. Serve with fresh salad.
