The lepeshki are a flat, round product of roasted dough. One of my favorite recipes for a quick snack. You can serve them with some kind of vegetable, a glass of juice or ayryan (kefir).

Description

The Lepeshki are a flat, round product of roasted dough. One of my favorite recipes for a quick snack. We always combine them with some kind of vegetable, a glass of juice or ayryan (kefir). And here's how I prepare them:


1 In a large bowl combine the two types of flour, salt and baking powder. Stir them.


2 Add to the dry ingredients the yogurt and the cheese. Knead a non-sticky dough.


3 Prepare the filling. I used grated gouda, but you can use any kind of hard cheese or white cheese. Optionally, you can replace or mix the cheese with ham.


4 Divide the ready dough into 12 small balls.


5 On a countertop with flour, roll each ball up to 3-4 mm. You put about one tablespoon of grated cheese on one end, grip and again pass with the rolling pin, until the lepeshka gets as thin as possible so that it can bake well. If during the roll you feel that the dough is sticky, sprinkle immediately with flour.


6 For baking, I use a pancake pan. The maximum level of my hot plate is 9, for baking the lepeshki, the most suitable is grade 5. When the pan is well warmed up, put a small lump of butter, immediately afterwards the lepeshka. Turn it gently with your fingers to spread the butter well. It is baked relatively quickly. If baking doesn't suit you, you can fry the lepeski. Again they become wonderful and more juicy than the baked version.
